Blackened Salmon Salad Sandwich

Ingredients:

  • 6 oz fresh salmon
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon canola oil
  • ½ cup Best Food® Mayonnaise
  • 1 tablespoon capers
  • 1 teaspoon fresh dill, chopped
  • 1 teaspoon yuzu juice
  • 1 teaspoon lime juice
  • Dash of cracked pepper
  • ½ lemon, zested
  • ½ lime, zested
  • 2 teaspoons unsalted butter
  • 2 King’s Hawaiian® Original Sweet Hamburger Buns

Preparation:

STEP 1

Heat canola oil in a non-stick sauté pan over medium heat.

STEP 2

Completely dust salmon in Cajun seasoning and cook to 140 degrees internal temperature, approximately 6-7 minutes.

STEP 3

Place seared salmon in refrigerator to cool. Once cool, crumble salmon into large pieces.

STEP 4

In a mixing bowl, combine all ingredients and mix gently taking care not to over mix.

STEP 5

Slice King’s Hawaiian rolls in half and toast with unsalted butter.

STEP 6

Place 3 tablespoons of on Blackened Salmon mix on bottom bun then add top hamburger bun.
